What is anhydrous citric acid ?
Anhydrous Citric Acid, molecular formula C6H8O7, is colorless translucent crystals or white particles or white crystalline powder, odorless, extremely sour in taste, soluble in water, alcohol and ether. It can be obtained by controlling the appropriate temperature during crystallization.
Aqueous solutions are acidic. It is slightly efflorescent in dry air and deliquescent in humid air
It is mainly used in the food and beverage industry as a sour agent, acidity regulator, flavoring agent, preservative, and preservative.
It is also used as antioxidant, plasticizer and detergent in the chemical industry, cosmetics industry and washing industry.

Characteristics of Citric Acid Anhydrous
Colorless translucent crystals or white particles, or white crystalline powder, often containing a molecule of crystal water, odorless, extremely sour taste, soluble in water, alcohol and ether.
Its calcium salt is more soluble in cold water than hot water. This property is often used to identify and separate citric acid.
It can be obtained by controlling the appropriate temperature during crystallization.
Aqueous solutions are acidic. It is slightly efflorescent in dry air and deliquescent in humid air.
It decomposes above 175℃ to release water and carbon dioxide.
Physical and chemical properties: Relative density 1.542, melting point 153°C (water loss), refractive index 1.493~1.509, critical solution crystallization temperature 36.6°C (crystallization above 36.6°C is Citric Acid, crystallization below 36.6°C is citric acid monohydrate).
